In the Boschetto region, closely linked to fish farming, the Mittag family runs a small and elegant restaurant where the trout is the only and undisputed protagonist.

Founded in 1998 by Federico and Laura, Sara’s parents, the business is then taken over by her and her partner Davide, bringing on the tradition started by her parents.

Though a simple and homemade preparation, Sara offers a varied menu which values the freshness and the surprising ductiity of fish .
A unique culinary experience for fish lovers and a curious one for those who are still unaware of its several flavors.

SMOKED TROUT AND TROUT CARPACCIO

The smoking is made on the moment with tree trimmings and juniper berries. The clean and salted trout is put on cherry wood in the smoking room. After the cooking, the trout is served (without the skin) with oil, orange pepper and sweet, thin-sliced onion. It is delicious cold as well, served with a mix of oil and lemon.

THE TROUT CARPACCIO RECIPEE IS A SECRET ONE …

This dish requires a long preparation time: the trout is sliced, cleaned and left ro sit in its secret ingredients for 12 hours and then still cooked for another three hours. The carpaccio is then served in thin slices and dressed with lemon, orange, oil and thin-sliced apple.

WHAT ABOUT DESSERT?

The dessert is rigorously homemade and it changes every week..
